What word does is like so, in the text stream you have...
0x19 field starts
the field code goes here
0x20 field middle
the last known field text goes here
0x21 field ends

This way you can optionally update a document to the new values that
should be in the field, or continue using the last unupdated values,
i.e. edit a document and leave the update time alone, and so forth.

a unicode character browser would be the best, but a tabular set where you can
select each block at the top, with the math symbols grouped together in
one block, and the greek symbols grouped together in another
(which i believe they are in unicode), plus one more of commonly used symbols
such as tm and (c), and then just go to displaying a handy number of symbols
from the unicode range per page.
