Sorry to reply at the top but...
I seem to recall fixing some bug in this area several
months ago. AbiWord should always save a file in the
same format it was opened. If you open a plain-text
file, edit, then save; the file should remain a
plain-text file without changing your "default file
format" preference. If this is no longer happening
it's a bug and should be fixed.
